Another Noob - Looking for advice on building stamina

Hello all. I quit smoking a year ago after 15 years of the nasty habbit. I got back into motocross racing after a 7 year hiatus and found my stamina was zilch. This past year I raced a few times with halfway decent results, but I'm fighting with my stamina, not my skill. Hopefully I can find some good ways to work on it. I plan on a strict routine over the winter months to prepare for next season. My morning exercise routine is: 30 push-ups, 50 sit-ups, 75 jumping jacks and 1/2 mile on the tread mill (using a pre-programmed workout). Sometimes I'll do some reps of that exsercise where you prop your feet up and place your hands on the edge of a chair like a reverse push up. It mainly works the triceps. I saw a clip on the AM news about some workouts you can do easily at home, but my DVR didn't record it. I'm also no slouch when it comes to the kitchen. One of my favorite hobbies is cooking. I've been changing my eating habbits, consuming less food and healthier food. A typical dinner would be fish or chicken, some sort of rice and maybe a salad. Once in a while I have steak, but I can't even finish a whole NY Strip anymore. My weight is 160-163 and any body fat is on my waist and stomach. I'm hoping to tone that area up as well. Any input would be great. Thanks.
